This another one of those super easy ‘can’t be bothered’ type of meals that EVERYONE loves. It’s great on a school night when you have umpteen curricular activities to navigate (remember those days, *sigh*), OR the night where you just want dinner done and sorted – so you don’t have to think about it later. Oh, and pork, because, crackling.
I use a slow cooker for this – again – set and forget. So easy. If you do not have a slow cooker – get one that has the option to saute/brown etc. Check out my other slow cooker recipes HERE.
cook // easy pulled pork and apple slaw buns
Ingredients
- – pork shoulder cut into chunks cut the fat/skin off
- – minced garlic
- – smokey BBQ sauce
- – S+P
- – a bag of ready-made coleslaw told you it was easy! + mayo – mixed
- – a thinly sliced apple – mix this into the coleslaw
- – good fresh buns
Instructions
- rub garlic and S+P all over pork – get it into all the crevices
- squeeze a generous amount of smokey BBQ sauce over the top (only smokey
- BBQ will do – any other type is just not worth it!)
- throw pork into slow cooker
- brown the pork …. until it is brown (!)
- slow cook on HIGH for 4hrs, orLOW for 8hrs
- shred pork and assemble buns with apple-coleslaw
- add avocado (or anything else you desire)
- ENJOY!
You will note that there is NO crackling. When I can be bothered, I throw the fat/skin into the airfryer with some oil and salt rubbed in – 220’C for enough time – VOILA – crispy crackling. Chop it up and add to the buns for an extra salty crunch!
