peanut butter choc-chip cookies – gluten free

You know those days when you are feeling like a little pick-me-up at 3:30pm? That boost of energy before the school pick-up. Or that little bit of sugar hit – ALL. THE. THE. TIME?

These biscuits are your go-to.

Disclaimer – they might be gluten-free, but they are choc-full of sugar – so turn away if you are paleo, sugar-free or watching your waistline.

These gluten-free biscuits may be THE easiest thing I have ever made. Apart from toast (actually – no easy feat when EVERY toaster we have had in the house either burns, or rarely toasts the bread).

I need to thank two glorious people for this recipe – Fo and Bec. It’s Fo’s recipe, but I saw Bec’s post on Instagram – I NEEDED to make these biscuits – STAT!!!

They are super simple to make – throw everything into a bowl, mix, roll into balls, whack on baking try, flatten slightly with a fork and bake – 180″C 8-10mins.

gluten free peanut butter choc-chip cookies

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 33 biscuits


  • 1 cup brown sugar
  • 1 cup peanut butter (I use natural peanut butter)
  • 1 egg
  • 1 tsp bicarb soda
  • 1 cup dark chocolate chips


  1. Mix all ingredients together

  2.  Roll teaspoon amounts into balls

  3. place on prepared trays - leave room for a little spreading

  4. Flatten slightly with a fork

  5. Bake 8-10 mins @ 180'C (160'C fan-forced)

  6. Biscuits will be soft - let them cool on tray

  7. Hide them from yourself - your waistline will thank you!
